Organic Sweet Potatoes & Free Range Crispy Chicken Delight!

So last night I decided it was that time for crispy chicken and sweet potatoes!  I thought to myself, YES! let's try this again and luckily I knew I had some local, free range organic chicken breasts from Goose The Market, one of my favorite places to get local produce and meats!  I love being able to buy fresh organic locally grass fed protein!   I also had some organic sweet potatoes.

After racking my brain, thinking about what I had in my pantry I decided to make organic sweet mashed potatoes instead of just a regular sweet potato.  This is also a great way to get your kids to get some great yummy nutrients in them and they don't even know!  

Sweet Mashed Potatoes: 2 Servings

Ingredients:  

Directions:

  1. Bring water to boil and add peeled organic sweet potatoes chopped into squares to boiling water
  2. Boil 20-30 minutes or until potatoes are tender / drain
  3. Add Traders Point Creamery milk slowly and use a blender to blend
  4. Add remaining ingredients and blend
  5. EAT!!
  6. (These are great to make ahead because they are just as good when you warm them up later!)

Crispy Chicken:  2 Servings

  1. Combine ingredients 2-7. Dip free range organic chicken in milk, then roll in the corn flakes mixture. Place in a greased 13-in. x 9-in. x 2-in. baking pan. Drizzle with butter or margarine. Bake, uncovered, at 375 degrees for 50-55 minutes or until juices run clear.

Serve it up and enjoy a yummy dinner!!!
