Fresh Bean Salad

Blanch cut-up beans quickly for about 3-4 minutes in boiling water. Rinse and dry to cool down. Throw in bowl. Cut up onions, celery, cukes and cherry tomatoes to add. This is a real fridge-cleaning recipe so feel free to use your creativity. Toss with your your favorite vinaigrette dressing. I made a quick one with a splash of red-wine vinegar, a dash of olive oil and a few powdered herbs like seasoning salt, garlic powder ... Sit down and enjoy! You have made an easy, crunchy, high-fiber and high-protein salad that keeps in the fridge for days!
